But when four Monpa women decided to bring the flavours of Arunachal Pradesh\u2019s Chug Valley to Delhi, thanks to WWF and Anthropie, they brought with them far more than recipes. What arrived was a taste of mountains, memory and resilience, quite literally, identity on a plate.   <a href=\"https:\/\/cqha.ca\/\">https:\/\/cqha.ca\/<\/a><\/p>\n\n\n\n<p>These women run <strong>Damu\u2019s Heritage Dine<\/strong>, a fine-dining initiative housed in a 300-year-old restored heritage home in Chug Valley. Their journey shows that food is not merely sustenance; it is heritage \u2014 one that depends on the quiet strength of community for its survival.<\/p>\n\n\n\n<p>\u201cI have always loved cooking,\u201d says Rinchin Jomba, one of the women behind Damu\u2019s. She recalls how hesitant they were in the beginning, unsure whether anyone would want to visit an old house to eat local food. But visitors did come \u2014 first a few, then many, and now from across India. \u201cEverything we make in Damu\u2019s is organic,\u201d she adds, reflecting the care embedded in every dish.<\/p>\n\n\n\n<p>True to their word, the menu is filled with dishes deeply rooted in Monpa traditions yet served with a contemporary touch.<\/p>\n\n\n\n<p><strong>A Cuisine with Stories and Science<\/strong><\/p>\n\n\n\n<p>One of their most remarkable dishes, <strong>Phurshing Gombu<\/strong>, is a corn tart filled with oleoresins from the Chinese lacquer tree \u2014 an ingredient with a powerful backstory. Extracting the resin is a specialised skill. \u201cNot everyone can extract it,\u201d Rinchin explains. \u201cThere is only one man in the village who can collect it. After harvest, the grain is ground in a <strong>chuskor<\/strong> (an indigenous watermill). The dough is then pressed through the <strong>takto shing<\/strong> (a handcrafted noodle maker). Finally, the noodles are seasoned with <strong>maan <\/strong>(garlic roots), <strong>dangoma<\/strong> (water celery), and a bold <strong>chamin<\/strong> made from fermented soybean paste.<\/p>\n\n\n\n<p>These dishes are not only flavourful; they represent the labour, skill and cultural memory required to keep Monpa culinary traditions alive.<\/p>\n\n\n\n<p>Beyond these signatures, the menu features <strong>apple tea<\/strong>, a vibrant and refreshing <strong>mountain salad<\/strong>, and <strong>millet momos<\/strong> made using Rinchin\u2019s award-winning recipe.<\/p>\n\n\n\n<p><strong>From conservation to cuisine: The Monpa woman redefining rural tourism<\/strong><\/p>\n\n\n\n<p>The seeds of Damu\u2019s were planted when WWF India, under its initiative to nurture Community Conserved Areas, partnered with the women of Chug Valley. What began as a heritage conservation project soon revived fading culinary traditions \u2014 and created a sustainable source of income.<\/p>\n\n\n\n<p>It was at this stage that a market perspective became crucial \u201cThe problem with most non-profit training programmes is that they don\u2019t start with the market,\u201d says Nishant Sinha, Coordinator of Community-Based Tourism at WWF. \u201cI first identified a gap\u2014tourists on the Guwahati\u2013Dirang\u2013Tawang circuit had no real food experiences. Traditional thalis are everywhere, so we elevated Monpa cuisine with a fine-dining twist. It is a living story \u2014 where tradition meets the plate, where heritage is served with contemporary flair, and where the flavours of a remote Himalayan valley find new
